Corn Slaw

  • kernels from 2 ears of cooked corn (mine was from the grill)
  • 2 tablespoons minced red onion
  • 2 tablespoons julienned spicy carrots
  • 1/4 cup chopped parsley
  • 1/2 finely chopped bell pepper (any color will do)
  • squeeze of lemon or lime
  • 1 tablespoon olive oil

Combine and season to taste with salt, pepper, and any other herbs you want to throw in. Add any other chopped vegetables you want to throw in.
