- kernels from 2 ears of cooked corn (mine was from the grill)
- 2 tablespoons minced red onion
- 2 tablespoons julienned spicy carrots
- 1/4 cup chopped parsley
- 1/2 finely chopped bell pepper (any color will do)
- squeeze of lemon or lime
- 1 tablespoon olive oil
Combine and season to taste with salt, pepper, and any other herbs you want to throw in. Add any other chopped vegetables you want to throw in.
