Orange / Lemon Curd

  • 1/4 Cup each lemon and orange juice
  • 1/4 Cup sugar
  • 6 Tablespoons Butter
  • 2 egg yolks
  • 1 whole egg

Combine all in bain marie, double boiler, or heatproof round bottomed bowl over a pot of simmering water. Whisk well and cook over simmering water for 15 – 20 minutes until thick and silky.
