- 1/4 cup good olive oil (I used basil infused in my first go round)
- 156 gm flour
- 2/3 tsp baking soda
- 1/4 teaspoon salt
- 2 tablespoons chopped chives
- 2 whole egg
- 1/2 tsp ground black pepper
- 70 gm grated gruyere
Mix together flour, baking soda, pepper and salt. Beat eggs until smooth and then add olive oil. Stir in cheese and chives. With a wooden spoon add flour mix to egg mixture and beat until dough blends together. Form dough into a loaf and place on baking sheet. Place in preheated oven at 350 degrees for approximately 30 minutes and remove when dough is light brown in color. Allow to cool for 10 minutes. Slice loaf using a serrated knife width-wise approximately 1/2 inch thick and place on baking sheet, on flat edge and bake for approximately 15 more minutes at 350 degrees. Cookies should be a nice golden brown. Garnish with flaky salt if you wish
