I do feel a little bit like I should wait until next week to post this, but why should this year be different than all others?


Like so many others in these trying time, I am baking my butt off. I even made matzo for my Zoom Seder!
Today, though, I had something else in mind, a life-long favorite – bialys. No. They are not bagels without a hole; they’re a different, though related, creature. Bagels are formed and then boiled before baking. Bialys are a similar though different dough, with the hole more of an indentation, and that little dip in the middle is filled with caramelized onions.
This was a good decision. They’re pretty fab!
