ORANGE OLIVE OIL BISCOTTI

  • 1/4 cup Orange infused olive oil
  • 1 & 1/4 cups all purpose flour
  • 2/3 tsp baking soda
  • pinch salt
  • 1/3 cup sugar
  • 1 whole egg
  • 1/2 tsp vanilla extract
  • 1/2 tsp orange zest
  • 1/4 cup toasted pecans (unsalted)

Mix together flour, baking soda, zest and salt. Whip together eggs and sugar until smooth and consistent yellow color then add  olive oil, extract. Stir in pecans. With a wooden spoon add flour mix to egg mixture and beat until dough blends together. Form dough into a loaf and place on baking sheet. Place in preheated oven at 350 degrees for approximately 37 minutes and remove when dough is light brown in color. Allow to cool for 20 minutes. Slice loaf using a serrated knife width-wise approximately 1/2 inch thick and place on baking sheet, lying flat and bake for approximately 12 more minutes at 350 degrees. Cookies should be a nice golden brown with no sign of moisture.
