All those lovely grilled veggies from Saturday night made an encore appearance for dinner tonight. I made a pot of faro pilaf and added the vegetables after it was finished. I had 5 good size mushrooms, a yellow zucchini and LOTS of grilled asparagus. There was even some leftover chicken to make it a meal. I am an unapologetic carnivore, but this could have easily been a vegetarian meal.
